Baseball days

This year we decided to have all the kids play baseball. CRAZY?!? We thought we were going to be crazy busy, and we are, but in a good way. We are loving going from game to game watching the kids play and they are all so fun to watch! Our son is on the majors again this year, our oldest daughter is on minors and the two lil girls are on the same team, playing farm league.

Below are a few pics I took of them. I don't have many yet, but plan on a lot more this season! This year it rained and the photographer took indoor pics. I didn't care for them and took my own when weather cleared up. So I am sharing those and two that I took of the lil girls this past Saturday. I thought they were cool. I'll share more of all of them when I get the right shots. ;D
We still have about a month of baseball. I look forward to every game. And this week we have one every night! ;)

Breakfast Quesadilla

This morning I had some fun in the kitchen. I opened the fridge and just started grabbing stuff. I wasn't really sure what I was going to make, but knew what I wanted in it. LOL 

First I started browning some Pancetta, then I added in some hash browns. I cooked them until the hash browns began to look golden brown. I added in the diced ham too! It already looked so good as is, but I love garlic. So I added in minced garlic as well as a little garlic salt and pepper to taste. If you are like me and like (love) sour kraut, then you will want to add some of that too. Not too much though. Sorry for not adding amounts, I will share more info below. Next I added some scrambled eggs to the mix. Cooked it all up and served it up in a dish with some shredded cheese on top. 

You can eat this as is or...I wasn't done just yet. ;D I had some flour tortillas in the fridge too! I keep them in there because they last longer. Bread too! Anyway...I decided to turn my hash brown mix into a yummy quesadilla. All I did was add a lil bit of oil to the pan, slightly cook both sided of the tortilla, then sprinkle some cheese all over the whole tortilla. Add your hash brown mix to one side and fold over. Brown on both sides then cut and serve. 

I can't explain how yummy it is. You just have to try it. And a big plus is that my kids loved it! Next time I think I will add in some spinach too!

Now below is the ingredients I used. ;D

....What you will need....
One package of ready to cook hash browns
1 package of Pancetta
1/2 cup of diced ham
1/2 tbsp of minced garlic
1/4 cup of sour kraut
4 eggs scrambled
Garlic Salt and Pepper to taste
Shredded cheese
Tortillas

The great thing about this hash brown mix, is you can make it and keep it in the fridge for a few days. Heat and eat as is or make 1 quesadilla at a time. You can even freeze the mix for future use.

Our visit to the Monterey Bay Aquarium

There is so much you can imagine when staring into an aquarium. It's dream like!! When we began our tour, I had no intention of taking a million photos, but go so inspired, I just kept shooting. I will be sharing some of those (many of my favorites) with you here today!

Scrambled Corn bread

A few weeks ago Jamie gave us a wonderful recipe for scrambled pancakes. If you didn't get to see it, visit HERE! It's so, so good and requested over and over in my house now! YUM!

Jamie inspired me to try something new. Last night, after a baseball game (our sons team won! ;) woo hoo!) we needed to make something quick for dinner. Yeah, I know scrambled pancakes is more of a dessert, lol, but the kids wanted them. And my hubby has wanted corn bread lately. So as I made the pancakes, I asked him if I should try corn bread this way. He said, "Why not!" So this morning I did!

I just mixed up some ready to make Corn bread mix. Just add water. Easy Peasy! And cooked them just like the scrambled pancakes.

...This is how they turned out...

Add butter and corn bread mix to the pan.
Continue to mix. The corn bread mix will by paste like.
Continue stirring and just break up with the spatula. Keep stirring until the corn bread begins to brown.
This is how it will look when you are done.
Let's sweeten these up a bit. Melt some butter and honey in the microwave.
Drizzle Honey Butter over your scrambled corn bread. 
Enjoy these with your favorite dinner. 
...You can also...
  1. When it is in the paste state, is to place it in mold, then bake for 8 minutes in oven at 375 degrees. Take out and brown on each side, using a little butter or oil. Kind of like corn cakes.
  2. Serve this with Chili. Just pour chili over the top, a little cheese and even add some cut, grilled hot dogs.
  3. Add in a can of sweet corn or a can of creamed corn. A little sugar and you've got a great dessert. YUM!

Pinwheel Cupcakes with Color Issue
