Garden Fresh Spaghetti Sauce

We finally have a bunch of tomatoes to call our own. I give all the credit to the man who started the tomato plants, he happens to have a Doctorate in Agriculture!! We've got three plants with at least 20 more tomatoes that will be ready to pick in a week or so. We've already gotten at least 15 tomatoes from the plants. Along with lots of tomatoes comes a need to use them. My kids can eat them like apples and they do for lunch sometimes, but when you get 10 tomatoes all at once you've gotta do something else with them besides putting them on sandwiches and just letting the kids eat them. 

I decided I needed to make some spaghetti sauce. I did a google search for a good spaghetti sauce and most of the ones I found made their sauce with canned tomatoes. So I looked at a few more and then decided to do my own thing with some suggestions from a few of the recipes I read. So, here's my version of Garden Fresh Spaghetti Sauce. Feel free to add or subtract from this recipe, I just used what I had on hand and it tasted pretty good in the end.

Ingredients:
1 onion
2 green onions
handful of baby carrots
1 zucchini
1/2 tsp minced garlic
oreganodried basil
2 large and 8 small tomatoes
2 tbsp white sugar
small can of tomato paste
dash of brown sugar at the end

I put the onion, green onions, carrots, and zucchini in the food processor and blended till everything was pretty small. I did add a little olive oil just to get things going. Then in a large pan I heated a little bit of olive oil and then added the veggies and cooked them for 10 minutes. This is also when I added the garlic, oregano and basil.
I cut the tomatoes into fourths before putting them in the food pro. I just pulsed it a few times because I didn't want tomato mush. I wanted the sauce to have a little bit of a texture.
Then I added the tomatoes to the veggies that had been cooking for 10 minutes and also added a little bit of white sugar, and the can of tomato paste. I let the sauce cook for about 40 minutes. The longer the better!! At the end I ended up adding a little bit of brown sugar because the sauce still seemed a little acidic to me.
I cooked up some Garden Fresh Fettuccine Noodles and we were all set. I also added a little cooked chicken to the spaghetti to give us some protein. I'm cheap so I buy the big bags of flash frozen chicken breast or tenderloins from the grocery store and then throw a bunch in the crock-pot...some I'll use right away and some I'll save for later in the week when I know I'll need chicken but may not have time to cook it. Saves me a lot of time. Plus it's nice to have cooked chicken on hand for salads and such.

I had plenty of sauce for dinner and I was also able to freeze some for another meal!!

We also had some farmers market green beans! Delicious!!
And no one even knows that I put a whole zucchini (also from the farmers market) and carrots in the sauce...so don't tell them, it'll be our little secret!

Photo App Love

So lately, I have been addicted to iPhone Photo apps and thought I would share some of my favorites with you all. I have been blowing up my iPhone camera for a few weeks now. I think my family thinks I am totally nuts, but I can't resist.

One of the best of course is Instagram. I am sure many of you have it too. If you want to check out my page, it's @tarajo4. Please do. It's so fun. Below are some of my favorite pics using Instagram.
I am equally in love with Instaframe as I am with Instagram. LOL I love that I can collage pics together, add text and filters all at once. YEAH! I made these photos with Instaframe.
More faves are Picfx and BigLens. They have really cool filters. You can even use some pretty fun focus techniques. I like these because you can either keep it basic or advanced.
With this photo, I used BigLens and Instaframe to add text.
BokehBooth and LensLight are really fun for adding Whimsical light layers to your photos. Endless fun with these apps. Oh My!

I also recently have been on MarbleCam and SphereLens. Very addictive. You will be playing with this a lot just to see how your pics will turn out with this effect. Here are a couple of mine.

Patriotic T-shirts

My sister-in-law and brother-in-law came down to visit over Memorial Day weekend. We put my handy brother-in-law to work...he wired our surround sound speakers, hung three ceiling fans and a chandelier! Yay for crossing things off the list!

Since it was Memorial Day and my niece and nephew are crafty (like my kids) I figured it would be a fun time to make a little project with all the kids. I had seen this t-shirt idea somewhere but now for the life of me can't remember where it was. I think it may have been Family Fun magazine but I'm not sure. If you know where it came from can you please let me know so I can give the proper credit!!?? Thanks!

These hand-print flag shirts were super easy to make! Just paint their LEFT hand to look like the flag. The bottom right corner is blue and then paint the stripes on the rest of their hand. Then put your kids hand down on the shirt with their fingers facing the right side of the shirt.

The blue paint dried too fast on Naomi's shirt so we made sure to get LOTS of paint on everyone else's hands. The white and red did mix on the few of their hands but that's the beauty of homemade shirts!







Hannah watched all the big kids do their hand prints and then she did a REALLY good job of letting me paint and print her shirt!!




Here they are on Memorial Day with their patriotic shirts! The great thing about these shirts is they can be worn for at least 3 holidays and are just a great shirt to show your support of America!


Um...someone did NOT want their picture taken!

Outdoor Fun

If you follow me on my blog this will look familiar ;)

It's summertime. Time to get outside and get into nature (do I sound like Dr. Scott the paleontologist?). My kids love to play outside and the other day they had just watched Sid the Science Kid who went camping with his dad....so of course they wanted to go camping too. They got their backpacks, filled them with the essentials, like: buzz lightyear, some stuffed animals, extra shoes, slippers, a stethoscope, journals and some other random items. I couldn't find the small tent that we have for them so I decided to bring out the card table and the card table tent that I made for them a long time ago. It was a hit. They played camping all morning!! Here are some photos from their expedition!

Then yesterday I decided it was time to bust out the pool. I wish we had one big enough that I could get in, but that may come soon!! They had fun playing in the water, splashing each other, playing a little wipe out and washing their toys. It was all good clean fun....until...
 ...Hannah discovered the dirt pile had turned to mud. This little girl LOVES to get dirty and could care less if she is dirty (I love that about her). She had fun squishing the mud in her fingers, painting on the pool with it and slipping and sliding all over the mud with her shoes.
 Eventually Naomi decided to join Hannah in the mud painting...but Micah didn't really care to get dirty. Silly boy!
 Apparently it's best to mow the lawn when you're muddy! They had a great time and mud time was quickly followed by bath time...now I just need to go and clean off all the toys!
Hope you're having a great summer so far and enjoying the great outdoors (now I feel the need to rent that movie).

I've been working on CHRISTMAS presents...have you? I've just got the very beginnings of a few things but I cannot wait to share what I've got in mind for those on my list (we draw names on both sides of the family now so we don't have to get something for everyone!). I've been finding some GREAT sales (like Flirty Aprons for under $5) and have been stocking up so it doesn't come to bite me in December! Do you buy ahead/craft ahead...or wait till the last minute?

Our church is going to participate in a few craft fairs this fall so I'm also working on some crafts to sell for that. I'd LOVE it if you'd consider purchasing something from my etsy store...sales from there will help fund the purchase of supplies for the church craft fairs to raise money for our churches budget!
